Cooking with Peaches

For an upcoming work event, a few of us (that are known to cook) have been selected to cook a dish with peaches, and then be judged on it. I don't eat peaches. Simply don't like them.

However, what is a good, simple dish that can help put me in the winner's bracket that utilizes peaches as its main component?

And for the record, I'm referring to Peaches, not Peachez, the world-famous finger lickin' chicken star.

Totally agree. Very easy dish to fix with the hardest part being cutting the peaches and peeling them to prepare the cobbler.

Put fresh peach halves in a zip-loc with some cinnamon and good bourbon, let sit for a few hours.

When it gets close to judging time, skewer them over the fire, grill, or griddle until just a little charred.

Peach bread pudding with some sort of caramel sauce like caramel pecan or caramel bourbon pecan sauce.

A peach caprese salad is delicious, refreshing and pretty. You could grill the peach slices or not. You could also add slices of prosciutto if you wish.

peach upside down cake... make using the same recipe for pineapple upside down cake...just substitute peaches for the pineapple.

Agreed on the grilled halved peaches. Can be with whatever meat/fish veggies you’re grilling. Can be with a salad or just as another side.

I don't have a recipe, but a tip since you don't usually like peaches. That tip is to try peaches from a couple different places before you buy enough for a recipe.

I haven't had a good peach yet this year. Every one I've eaten has been bland and they've been from different sources. Since you always want to cook with best ingredients, I would suggest sampling a few different ones before buying in bulk.

In a factory downtown.


Last night I grilled some halved peaches, topped with cinnamon sugar, for a few minutes. Topped with a scoop of vanilla bean ice cream FTW !

Here's my go-to peach cobbler recipe and it is always a hit with those who eat it.


6 large peaches cut into slices and peel removed
1 1/2 cups sugar divided
1 1/2 cups all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup melted butter plus more for coating the baking pan
1 tsp. vanilla extract
2/3 cup milk
1/4 cup ice water

Grease a 9 x 13 baking pan with butter and line it with the peaches.
Combine 1/2 cup sugar, flour, baking powder, salt, melted butter, vanilla and milk. Stir until smooth and pour evenly over the peaches----spread with a spatula if need be to even it out.

Then combine remaining 1 cup sugar with 1/4 cup ice water and pour over the batter mixture.

Bake for 1 hr. at 350 degrees. I like to let it cool before cutting and toss a scoop of vanilla ice cream on top, but it's damn good just plain with a glass of cold milk.

Here is a guide to making different kinds of cobblers.

Cobblers

2 to 4 servings

A cobbler can be made with a variety of fruits mixed with dough and baked. I use black berry (actually dew berries), peach and apple because they are what I like. The amount of fruit and dough can be varied depending on if you like more fruit or more dough.

Dough

• Melt about ¼ cup of butter.
• Mix about 1 cup Pioneer Buttermilk biscuit mix with milk, until thick and creamy smooth.
• Add about 3 ot 5 tablespoons sugar and mix.

Fruit filling

Use about 1 to 1.5 cups, of one of these suggestions:

1. If using black berries, they should be well sweetened.
2. Fresh fruit can be used. If so, cut up the fruit into thin slices and sprinkle with 3 or more tablespoons of sugar. The sugar will bring out a little juice to flavor the cobbler.
3. 1 or 2 cans of your favorite fruit “pie filling” in heavy syrup.
4. Or, one of my favorites, is fresh blueberries.


Cobbler Preparation

Select size of baking pan so that after fruit and dough are mixed it will be about 1½” thick. About 9x9 inches cake pan.

• Add about half of the Fruit filling to pan and spread evenly.
• Spoon in about half of the dough spreading it over the surface.
• Mix the dough and filling a little but keep the dough evenly spread out.
• Add remaining filling.
• Spoon in some of the remaining dough and mix a little.
• Spoon in the remaining dough on top and spread evenly.


Cooking

Preheat oven to 375 deg. F.........cook about 25 minutes...........until golden brown.

This can also be done using a Dutch Oven and cooking with coals from a campfire. Be careful not to use too many coals (too hot). It is better to take a little longer than to burn the cobbler.


Serving

Serve hot with lots of Vanilla ice cream.
