So what’s coming out of your kitchen during this stay-home week? Cookies are on my agenda, as well as a low and slow brisket.

I did the Donald Link smothered pork roast Sunday, we've been eating off the leftovers all week

Made a marinara Monday and did veal parm and baked ziti these past two night.

Leftovers and frozen food these next few days

Smoking a butt Friday that should last us a few days.

Sunday - pork chops rice and gravy
Monday - leftovers
Tuesday - Homemade burgers

Upcoming - Roasted chicken thighs and spaghetti/meat sauce

Stocked the freezer this weekend, having to make room

Been working through some leftover red beans, but I've got two whole chickens that will be going on the smoker today or tomorrow. One being served with Alabama white sauce, the other going into a chicken pot pie.

Tonight will be boneless chicken stuffed with boudin, burgers, deer sausage and asparagus on the grill. Probably cook a pork loin tomorrow. Possibly crawfish this weekend.

made Marcella Hazan Bolognese sauce last night. Added my own flair and it came out great!

So far:

Red Beans and rice with black skillet Mexican cornbread

Bison Chili (also with cornbread)

Smoking chickens right now for whatever Mrs. Crickets wants to do with the meat; will make stock from the bones

Fried Chicken and Andouille Gumbo in the next day or two

Not sure what else, but I'll just keep on cooking--therapeutic.

Made some very tasty tacos last night! Homemade marinara and meatballs penciled in for tomorrow night.

Tasso'd white beans and rice planned for the Sunday slow cook.

I'm clearing out my freezer since I have a LOT of food already prepared. Besides, I like to downsize the amount of stored frozen food I have as hurricane season gets near.

So, that works out fine for me. Today I took out a quart of vegetable/beef soup to eat for lunch and for dinner tonight I will grill some homemade green onion and hot sausage to go with the fried rice I made 2 nights ago.

We still have a little corned beef and cabbage that I cooked yesterday for St. Patrick's Day----the only thing I've cooked fresh in several days.

I will be busting the grill out this weekend and doing a smoked brisket and something TBD. During the week, we've been eating those Meal Deal specials from Fresh Market lately. Twenty bucks gets you a meal for 4 people that includes entree, starch, and veggie/salad. Since I have two kids that work part-time at Fresh Market, I get 20% off, so it's 16 bucks. Hard to beat that meal. I think it's fajitas (shrimp, steak, or chicken) this week, so there are no sides.

I'm going to get some short ribs going in a little while. I bought them mainly because Albertsons had very little meat selection yesterday morning.

PS - And I don't want to go from store to store. I'm one of the elderly!

As it is, I tried to shop as early as possible to avoid being around others.

Thinking some short ribs later in the week. I've got a cow tongue in the freezer but pregnant wife isn't feeling lengua.

Monday, schnitzel with roasted shallots/brussels sprouts. Yesterday, grilled cheese with Gruyere, bacon, chanterelle mushrooms, red bell pepper, and jalapeno. Tonight, chorizo tacos.

Smoked a bunch of food on Sunday
-Rack of beef short ribs
-rack of spare ribs
-breakfast sausage chub
-pork butt

Also grilled some skirt steak and thinly sliced pork butt for al pastor and made tacos with it.

Thinking of doing some asian style lettuce wraps with some leftover short rib tonight and then planning on baking some cookies and throwing together some dough for no-knead bread tomorrow

Pasta e ceci few nights ago.

Burgers last night.

Been doing BLTs for lunch.

Probably going to do white chicken chili this weekend when the weather cools off and it's raining.
