Cooking “Stuffed Elephant Trunk” for gameday. Turned out awesome

So I make a big “Stuffed Elephant Trunk” for LSU-Bama every year. It’s a huge hit and gets requested, and I love making it.









Finished Product. It went in about 30 mins. Everyone loved it. And I enjoyed the hell out of seeing people enjoy it.

Mayyyyyybe. It’s a massive 8lb loin

But on gameday it’s stuffed elephant trunk.

It ain’t the rain i’m worried about, it’s being able to get the fire started and the pit up to temp for long enough in a deluge

Do you not have a tarp? A high dollar tarp has saved my arse I don’t know how many times. Backpacker should have some lightweight tarps you can hang with ease high above your setup that will prevent rain or fog from ruining your fire.

We’ve got tents but I worry that the heat coming out the chimney will melt them. Looking at the weather coming in tomorrow it’s gonna be nasty in the morning

I wouldn’t worry about that unless you’ve got direct flame on it. If you’re that concerned about it, redirect it. Get some shitty dryer exhaust that’s flexible to redirect the heat where you want it when the pit is closed.

Grilled under one for St Aloysius fair last weekend. The heat on tent wasn’t the issue, it was all the damn smoke. Keep temp 250 until rain passes then add more charcoal.

Rain won’t stop it. You will just need more fuel. Light the pit earlier than you normally would to get it up to temp.

That’s what I went with. People will just have to wait.

It’s about the spectacle of it really. Defeats the purpose if I cook it at home

So I started out sautéing onions, garlic, an Anaheim pepper, a jalapeño pepper, deer sausage and Italian sausage.

Then mixed in the cream cheese once those were cooked.

I cut the Elephant Trunk (8lbs) and ran the knife so goes in a spiral then get a flat meat surface to work with.

Then laid down about 4lbs of bacon, laid the meat on, spooned out the filling generously, rolled it up, wrapped it in bacon from
One side then got more bacon and wrapped it from the other side.

Wrapped in 2 layers of foil.

How long did it take doing it like that? I don’t want to dry the meat out, though it stays pretty juicy with all that filling and bacon
