The testers, many of whom are known chefs and food writers, were surprised at their own selections.
Hey, eat what you want. I like trying different fish and cuts of meat, and that's how I often find stuff I like. (Some like grass fed beef, but I've heard a rancher's daughter say she wouldn't eat their own steer-before it went to the feed lot for grain-- because it was grass fed so not tasty.)
Don't dismiss farmed fish just because you liked wild when you tried it or the wild promoters had a persuasive marketing program.
Try it and decide. I kind of like both, but I really like the cheap price of North Atlantic farmed.

Never had fresh wild caught salmon till I moved to Alaska (ate canned salmon in salmon patties for most of my salmon experience).
Hands down you cant beat a freshly caught king salmon from the yukon or kuskokwim rivers.
Copper river reds also very good.
Cant go back to anything else
ETA: not putting people that eat farmed salmon down, just saying cant beat fresh alaskan caught salmon.

Wild is definitely different from farm raised. Both are good, it’s just a preference thing.
Why in the world does anyone waste good salmon by baking it???
Either pan sear in cast iron with butter, grill it or smoke it. Don’t over complicate it. Salt and pepper works fine, as does lemon pepper and/or Tony’s.

I take skin-on salmon and apply S&P or a small amount of Memphis Meat Dust that I usually have on hand.
Preheat gas grill on high, then turn down to medium, clean and oil. Put fish on meat side down (I know, it sounds crazy), close the lid, and let cook for 5 minutes or so.
Use tongs to gently rock it to see if it has stopped sticking. Once it releases--and it will--turn it over to skin side down. Close the lid and keep cooking until it hits about 125 on an instant read thermometer.
If the skin sticks, you can use a thin spatula to lift the meat off of it. It usually does not stick.
I like to serve with a sauce of Fage' yogurt, lemon juice, capers, and fresh-cracked black pepper.

I live 20 min away from Westport. Big numbers of coho are expected this year.
Silver's and spring chinook salmon are the best tasting salmon we have locally imo.

I honestly can't remember...it's been several years. I would love to go again though. It was a fun time and the fish we caught we grilled that night. Was the best damn fish, salmon or otherwise, I've ever had.
