If you're going to pan sear the salmon, using a non-stick skillet helps keep the fish from sticking in the pan.. and use ghee to coat the surface of the pan. It browns the top of the fish perfectly. Cook on med-high for 3-4 minutes on each side.

I like the farmed salmon from Peru by C.Wirthy. I find them just as good as the fresh Copper river salmon I've bought in Louisiana.

We broil them 4-5 min / side with butter, lemon, a few bread crumbs and a little parmigiano.
