Don't fool around with the farm raised stuff that you find at Albertson's for 4.99/lb. It's disgusting.

Go for the wild Alaskan. The colder the water the fish comes from, the higher the Omega content. Wild Alaskan King is fattier and has a more buttery flavor and the Sockeye has a stronger, more mineral flavor and will be darker, more ruby colored with less fat. What you prefer will be subjective. Both are great.

Washington Post did a blind taste test with chefs and food writers tasting identically cooked salmon.

quote:

The judgments were definitive, and surprising. Farmed salmon beat wild salmon, hands down. The overall winner was the Costco frozen Atlantic salmon (Norwegian), added to the tasting late in the game — to provide a counterpoint to all that lovely fresh fish, we thought.

I buy it all the time. I enjoy wild but the farm raised is a good alternative and it has more fat than most all wild. And unless they are specific rest assured you are more than like;y getting farm raised in restaurants.

The fish aquaculture has come a long way in the last 20 years and is sustainable. I like a farm raised catfish as well.

Not sure why unclejhim has the downvotes. I like it best like that, pan seared fast and hot but rare.

And I like copper river too when they can be had but for the most part it’s a marketing gimmick. All Alaskan salmon is good.

But back to cooking it, if you like terrines Mary Berry makes a nice one that I’ve made to serve at parties. It’s easy to make, tastes great and serves well.

Which is why I don't order Salmon in restaurants. Unless they specify pacific wild caught or Scottish wild caught.

There is a HUGE difference in taste between atlantic farm raised and pacific wild caught. Despite what the bullshite WaPo wants to push.

That's because they don't exhaust their fat during the exhausting period of the spawning process.

If it isn't wild I'm not eating eat.

I eat way too much fish to discriminate at a restaurant and while I live on the gulf coast, fish myself and have good access to local fresh seafood I’m not against eating certain aquaculture. Even living here, the majority of seafood we eat at restaurants is farm raised including salmon, catfish, Redfish, drum and especially shrimp and increasingly oysters.

And while the whole taste debate is nothing more than that, I’m not going to argue taste. That’s simply personal preference and you can google until your eyes bleed and you will find arguments on both sides. I enjoy wild salmon. I’ll eat it whenever I can at a restaurant or buy from Whole Foods and cook myself. I get it. It’s great. But to wholesale discount the “farm raised salmon is gross” is a bit disingenuous. It has its place, its affordable, it’s good and its available year round. It’s also not from China.

I don’t put ketchup on a hot dog but I don’t disparage someone who does.

So what do you eat if you can’t get wild fish? Farm raised beef, pork or chicken? Farm raised lettuce, broccoli and carrots?

I get it. You live in an area that can get fresh wild caught salmon. I have a freezer full of wild caught Redfish, red snapper, tuna, shrimp, sac a lait and shrimp. I enjoy my wild bounty. But if I can’t get a piece of wild caught salmon as much as I eat it, I’m eating farm raised.

I don't eat much so I can hold out but I wouldn't fault you for eating farmed. I just won't.

Yes, Me, too. As long as it was fresh, I never had a piece of fish I didn't like.

Maybe, carp. OK I never had a good carp fillet.

No, it doesn't have it's place. You and I will have to disagree.

Putting ketchup on a hotdog is like putting a lemon caper sauce on farmed salmon. Useful, but ultimately unsatisfying.

Wild caught pacific salmon is far too easy to obtain even in the wild wild east that is here in South Carolina to mess with farm raised trash.

I thought I understood salmon until I caught my own off the coast of Westport, WA.

You need to get out of your comfort zone and live a little...sardines, hoop cheese, saltines, Farm raised salmon all can be enjoyed.

I’ve eaten salmon from all over the world....really quality stuff. But the cheap farmed salmon we often enjoy at home is excellent when prepared properly.

As have I. To include your sardines, hoop cheese, and saltines.

That doesn't change the fact farmed atlantic salmon is inferior to wild caught pacific or wild caught scottish.

Considering when I was a kid my mother made salmon salad sandwiches I believe I’ve made great strides. I still make canned tuna fish.

And I has a can of King Oscar sardines today. Might be why my wife is nowhere to be found.
