Comfort food today

Cooking a nice size pot of chicken stew with a rich brown gravy, potatoes, carrots and peas in the pot to go over a bed of La. long grain rice for dinner tonight.


Will likely mix up some jalapeno/cheese cornbread to go with it and toss that in the oven about 1 hour before eating.

So, what's on your "Waiting for the storm" menu???

Doing a pot roast and a batch of chicken enchiladas. Can't decide if I'll cook one today and one tomorrow, or both today.

The enchiladas are a Serious Eats recipe. Looks great to me.

That does look good. One of my favorite chicken dishes is King Ranch Chicken Casserole and my wife will eat it until it is gone.

Four days ago I cooked a HUGE tray of lasagna with ground meat and my homemade Italian Sausage for the meat and made my red gravy from scratch, cooked it all down for about 4 hours before putting the casserole together.

When I was done it was 4 layers tall and the pan I used must have weighed close to 20 lbs. We ate on it for 2 days and then I put what was left in the freezer for eating some other time.

I'm not waiting for the storm but I'm going to pan fry some walleye for dinner. With a side of home fries it might be my favorite comfort food. I may not even bother with a vegetable.

I love lasagna, and this sounds so delicious. Food as good as lasagna makes it so hard to limit your intake, which is why I don't make it often. But it is my #1 Italian dish.

My wife cut out a piece about 3 inches square and when she put it on her plate all she said was "Oh my God, that's too much" and put half of it back in the pan.

I did have a tray of garlic/cheese bread to go with it, along with a nice bowl of "Wop Salad" I made earlier in the day.

Boiling some shrimp with fixings. Hopefully the rain holds off this afternoon so the kids can play while I boil. Wash it all down with some Canebreak’s

I’ve been making lots of chili here in Oregon as we burn everywhere. Chicken stew sounds yummy too... I’ll put it on the list

One of my favorite dishes. I make it almost the same as gumbo, just thicker and with some crushed/whole tomatoes and some veggies added in.

It got demolished at our NYE party last year.

Romaine, tomatoes, cucumber, pitted black olives, a little bit of thin sliced onion, minced fresh parsley and sweet basil, a few cut up artichokes that are marinated in oil.

For the dressing it is just a vinegarette of choice when it comes to seasonings to go in it, and I like to add just a light sprinkle of grated parmesan to the finished salad.

I made a big pot of pork green chile stew in the pressure cooker....it will last thru the storm (hopefully) as stew, repurposed as taco filling, and likely as a nacho topping before I’m done. Turkey meatloaf is up next.
