It's not just Texans
Any reputable chili competition doesn't allow beans or other fillers
It doesn't mean that adding them will ruin your dish but it's not considered to be authentic

I NEVER put beans in chili. That's just filler. Only the best beef and ingredients for me.

I put beans in my chili because it is filler. When I make chili it is usually a budget dish and beans help stretch the servings. I know the "proper" way to make chili, but I choose to make it the way I like it. To each their own.

Powerman is about right. I make it both ways and eat it both ways and if you see beans in a Texas chili (which you do) it's normally an East Texas. Hill country and West Texas you won't and it will be cubed beef roast of various cuts but mostly cuts that braise well like a chuck.
If I make it without I use cubed chuck or cubed venison. If using beans I use a chili grind which is larger than a regular ground meat. Only regular grind and no beans on hot dogs.

I perfer Chili with no beans, but if its good Chili it doesn't matter if it has beans or not its all about the flavor.
