You are using some F’ed up recipe with six cans of tomatoes. I just use one can of rotel and some adobo chipotles from the jar. I cheat with Guidry mix and also add a chopped up poblano pepper. No chili for me again till fall though, and I do like beans, so what texicans

As mentioned, cut the tomatoes. Add chili powder. Add ancho chili powder. Add cumin. Add a diced habanero. Float a jalapeño for a while in it with slices in the side. I dump a Guinness beer in ours and beef stock. No water. Work on adding these things in dumps to give your chili a layered flavor profile. Chili isn’t gumbo or etouffee. Great chili flavor is built and “stacked” in the pot. You really want to ratchet it up, dice up some smoked brisket and add that. And don’t use crap chili meat. You don’t want all that grease capping the top and not letting liquid evaporate.

60 oz in my 9 qt batch for 4.5# of meat. 13:1 ratio.
Comparable to Gris Gris recipe above which uses a 28 oz can for 2.0# of meat. 14:1 ratio.
It comes out pretty good but I liked it better when I cut down the tomaotes last time.
As others have said I am going to try steeping chilis and blending them for the base next time. I didn't use beer either so I will use that as well for the liquid.

Do what cowboys often did...throw in some coffee, whiskey, or beer.
I often put coffee and beer in mine
Also, a great touch is bacon grease, and chipotles in adobo sauce, you can get it in almost any Mexican section at Walmart/grocery stores. Just make sure to blend the peppers

It actually came out pretty good. That added some sweetness so I didn't add any sugar/chocolate like I usually do.
Again, large overall volume so it wasn't like eating a sloppy joe.

Don't use tomatoes. That'll fix the tomato flavor. Use a pepper slurry instead. Go buy a couple different types of dried peppers. Toast them, then simmer them for a bit until they're really soft. Blend it all up. I also like adding a high abv stout/porter. Add half, and drink half.

I don't know about obscene. In line with Gris Gris recipe above and the ratio actually came from a Boilermaker chili recipe I found online. Tomato based chili is certainly more of a yankee thing than what is made in the South or Texas. Which as some people have said have absolutely no tomato ingredients.
But I will be trying to migrate to a chili pepper based liquid rather than tomato based in the future.

Maybe I've spent too much time in TX. I'm not opposed to tomatoes but 6 cans seems like a lot for a 9 quart pot.

Agreed.
It comes out pretty good but you would definitely have to like tomato based chili to eat it. I grew up with that as my Mom was from Wisconsin and all Chili up North I've seen is tomato based.
I think the other spices, flavors, and meat are getting lost in the tomato flavor as it is dominating.

Ditto. But for the coffee, use about a TBL of instant coffee instead of adding more liquid.

leave all the tomato paste and stewed tomato's; add brown or white suga, 1 cup of coffee, beef broth, 1 can of beer.
