Ah yes, burnt ends are usually the lowly trim pieces of bbq. NOLA market is the only place that enjoys them

I never said that there is anything lowly about burnt ends. What I'm saying is that it's harder to cook a moist and tender flat than what it is to cook burnt ends. There much more intramuscular fat content within the point. Burnt ends are about as hard to prefect as pulled pork. Too much credit is being given to something so simple.

Alon Shaya is a likeable, friendly, polite philanthropist who doesn't douche it up on social media. Prob the main difference there
His samplers also jumped $3 and $5 since opening, yes? $12 to $15, $18 to $23 for the 3 and 5 sampler offerings

Remember when he talked the big game about moving in and being part of the neighborhood; then didn't participate in the block party for all the businesses on that small stretch of Magazine.
The sampler at Shaya was 3 for $9. Don't forget having to beg for pitas now.

I think it's smart, demand is high so you raise the per serving price. I can't fault him for that. We love Blue Oak but damn those are expensive wings.

I liked the LA23 burnt ends better.
But they don't sell them. Or at least aren't on the menu. Brisket is really good and the sausage is phenomenal.
