Cast iron or carbon steel

I’m thinking of adding a new pan to my collection and either gonna go high end cast iron or carbon steel. Those with both, which do you prefer and why?
ETA: I have the cheap lodge cast iron now. Never used carbon but came across it when reviewing nicer cast iron.

I love my de buyer large skillet and it can be purchased pretty cheaply on Amazon...

Got a carbon skillet and use it daily. It’s a lighter version of cast iron.

What will be its primary purpose? What's your budget?

Hot Blonde vs Hot Brunette?
Whatever is your preference.

I don't have any carbon steel but the Butter Pat 8" polished cast iron skillet I bought earlier this year has resulted in my 20 year old Lodge remaining in the cabinet. I've only baked cornbread with it but that's about all I do with an 8". The highly polished surface allows the baked cornbread to release from the pan like it's an All-Clad nonstick. It's a bit heavier than my Lodge but nothing really noticeable in such a small size. Can a cast iron skillet be good lookin'? It's obvious the hand work is top notch, making the skillet a piece I'll be proud to hand down someday. I've got their 10" and 12" skillets on my kitchen wishlist.

I've got a thinner carbon steel pan (Volrath maybe). I use it mostly to cook peppers and onions at very high heat. It's easier to handle and clean because it's so light.
Mine doesn't have the heat retention of cast iron, but I think if you bought a thicker carbon steel pan it probably would.

Get a Demeyere Proline and never look back. Haven’t used any of my cast iron or nice carbon steel pieces for searing since I got my Prolines.

I was at Restaurant Depot the other day and picked up a Lodge carbon steel pan. I didn't find it to be significantly lighter than a cast iron pan. Is that specific to Lodge or am I imagining things?

I would go cast iron for this. Cast iron is thicker and heavier so it retains the heat when you put something dense into it like a steak.
I bought a carbon steel last winter and I love it. It’s basically a thinner version of cast iron. It works well for searing I just don’t think as well as cast iron.

What don't you like about your lodge?

Check out Field cast iron. I bought one of these and I love it.

Yeah debating between that and the butter pat and smithey I think. Also gonna take an angle grinder to my Lodge and see how that turns out

Field is solid. A slightly longer handle and side spouts would have made it an auto-buy for me

An angle grinder solves that problem.

I'd prefer to throw it in fire to get down to bare iron, but that certainly works too
