I also like the pimento cheese. It's hard to find good ones sometimes. I'm not in BR, so I buy the Palmetto (I think that's the name) with jalapenos quite often. It's very good for packaged pimento cheese. I've scooped it out to serve before and people ask if I've made it because they like it and can't tell it's packaged. Sometimes, you run across a good packaged product. I make it on occasion, but I actually like the Palmetto better than mine. Not my forte, I guess.

Oh man I could go for some calvins chicken salad, some slices of white cheddar, crackers, grapes and a beer right now! That used to be a staple for lunch almost a decade ago on long days designing a BR magazine layout with a coworker.

And I had another Calvins chicken salad sandwich for lunch today at mothers.

The only way Calvin's can keep they're chicken salad so inexpensive is by using canned chicken.

I just read your link to the old thread about the chicken salad. I referred to the Shelby's chicken salad that was also being sold at Calvin's but is no longer available. I have not found a replacement for Calvins "smooth" chicken salad, BUT I found a replacement for Shelby's "chunky" chicken salad at Beagle Bagel in jackson. If any of you are ever up this way, you gotta try it!

They're probably using frozen, precooked chicken. Wouldn't surprise me a bit.

While I do like Calvins, it's overrated and I know all of my dollars are going to the bottom of a liquor bottle. I prefer Mathernes style most of the time.

What is Matherne's like? I haven't tried it yet. Not a huge fan of super chunky chicken salad.

It's not chunky but it's not paste like Calvins. I could eat Mathernes with wheat thins every day.

I know they cook bone-in chicken breast (because it’s cheaper than boneless). They use so much chicken and mayonnaise, they get rebates from the vendors.

I know it’s considered the best in BR, but I don’t love it. I like one with more pickles and chunkier vs smooth. I do eat it, just not my favorite.

Calvin's daughter Kalyn's Pimento Cheese is great..

Elsie's version in cheese grits, burgers, etc..is fabulous.

The owner of Calvin’s daughter makes an excellent batch of pimento cheese

Elsie’s, another BR establishment, also makes a great pimento cheese dish

I like Calvin's but it has something in it that I'm not quite fond of.. like MSG. I prefer Calandro's Creamy Chicken Salad.
