I like plain white beans that come out.... white and creamy. Sounds kinky but here's the recipe.
Use dry white small navy beans. We'll go with 2 pounds and you can ramp up the recipe from there. I usually cook 6 pounds at time because if you do 2 lbs or 6 pounds the mess is the same and you have some for the freezer. They freeze very well.
Ingredients
2 lbs dry white beans, use the small ones.
1 large white onion
1 lb pickled pork
2 TBS salt
1 TBS White pepper
1 cup of Crisco or Hog Lard
Method
Clean them, go through them and get out and mud clumps or pebbles. You can soak them over night or not. Sometimes I do, most of the time I dont. Put them to boil. When your water comes to a boil they will foam. Dump all that nasty water out rinse them and put them back to boil. They will again foam, rinse them again and put them back to boil. At this point you add you diced white onion and Crisco or Lard. Let them cook at heavy simmer till they start to get creamy, add your diced pickled pork and cook them on a slow simmer till they are done and the consistency you like, I like mine a little on the thinner side.
I've cooked white beans for probably close to 50-60 benefit dinners and never had a complaint. For 6 lbs of bean I use a 15" Magnalite Roaster and it fills it almost to the top.

Eh, many recipes on here are vague. I worked as a side job in the restaurant industry for decades so I can follow vague recipes pretty well. Many people want recipes broken down and easy to follow, I think that's all OP wanted. The top reply on this page broke it down pretty good. This is the Food and Drink board, so if I post a recipe on here I post exact amounts of everything from trinity to meat, spices, everything, and exact order I do things, I know many people appreciate that.

What type of beans do most typically use?

I have a 14 oz pack of Goya Great Northern, I hope that will suffice. Why they don't just pack it at a full 16 oz for an even pound. Shrinkflation.

To be slightly healthier I got a smoked turkey leg from Walmart and used that in place of ham hockey but bam gives a better taste. Just if lining for a lower sodium substitute

I prefer Great Northern over Navy beans.
I always fix white beans after Christmas or Thanksgiving because we usually have a Honey Baked Ham bone left over with good chunks of meat on it. It makes an excellent addition to the beans.
