Cooking up the duck. Tastes fantastic. Seasoned with salt and pepper. I supplemented with about 1/2 lb of chicken thighs (not pictured).





And the roux. Combo of duck fat, bacon grease, and veg oil.

Looks good, and I like duck. May have to try this.

What kind of temp were you at during the 3-hour smoke? I'm guessing pretty low since it did not cook the ducks through.

Smoked around 220 I think. It's a brinkman electric. Next time I'll smoke to longer so de boning isn't such a pain.
