Broke in the Prime Day Anova Sous Vide with some Strips

Got the $99 Anova on Prime Day and was ready to give it a try. Went to Rouses and got 4 Bone In NY Strips.
All in all I was impressed with how evenly cooked the steak was. Every piece the same and perfectly medium rare. I need to work on my sear (seared on a pan on the stove) because I felt the meat wasn't warm enough and was missing that crust

I'm use to cooking fillets on my ceramic . I just didn't find it as the life changing steak I had built up in my head

That's why I have held off with messing with Sous Vide.

If you have a chimney and a grate, try searing like this. Just lay the grate on top of a flaming chimney, and it goes fast.

Did you rest and super-dry your steaks after SV and before searing? It goes against my nature to dry/wick/rub off any surface goodness, but the instructions are right to get rid of all moisture.
Been experimenting with an ice-bath then refrigeration after SV, the purpose being that I can hit it with a hotter sear and not ruin the internal crust-to-crust medium-rareness.

It's all about the sear on a SV steak.
That said, it's really nothing special. I haven't used the SV in prob 6 months. You read about it on here and just laugh, it's way overblown

I still prefer to crank the heat on my Weber gen to cook a steak. It takes like 6 minutes maybe

The steaks look good but I just have to ask, what do you need that giant tub of garlic for? I use a lot of garlic but that is rediculous! Lol

SV is nice because it's hard to screw up.
The results for steak can be achieved similarly using other methods; I still prefer reverse searing for steak since I can impart more smokiness.
SV is really nice for chicken & pork chops however.
