My IG algorithm showed me some guy who made steaks out of the brisket flat and I think i'm gonna try it. He cut the flat into steaks that look somewhat like NY strips and then sous vide them for 72 hours at 130 degrees to get everything to break down. He then patted them dry and seared them. They looked pretty damn good.

I think I may try it. Anyone else done this?

Seems more trouble than it's worth. No way would I slow cook something for 3 damn days and still have to grill them to finish them off.

Sounds like a bunch of pretentious "WHALA" bullshite to me.

I still haven't heard a decent explanation for the ridiculous sous vide cook times? After 8-10 hours of SV, I assume you're just chasing clout.

That seems like way too long. All the moisture would come out of that meat and it would be dry af. You’d end up with a bag of meat and water in your water bath.
