Put a big one at 7 pm. Check it again at 5 am

Couldn't keep the heat down so I pulled it and will finish in the oven. Got 4.5 hours of good smoke and good bark. Was 156 when I pulled it off and I'm ready for bed and don't want to worry about ruining it.

Thanks for the compliments on the outdoor space. We did most of it ourselves and spend tons of time out there. Here's to a win tomorrow and then a couple more so I can make the trip with my dad to Omaha.

Pop it in a 225 oven and get some sleep. I do 8 on the smoker and 8+ in the oven. You'll be fine.

Put a 12lb prime one on at 5am.

Generally bout 12-14 hrs on my smoker at 250-260. Have it going over some rockwood lump and Texas post oak.

Kept the backyard out of the pic.... can't match what the OP has.

I sometimes have the same problem, keeping the flame down, on my kamado Joe.
It's hard to keep an eye on it
without opening it.
