Boiling a brisket in crab boil before smoking

Was introduced to this crazy cooking method a few years ago. The boil really seasons the meat well while guaranteeing a tender slab of meat. About 1 hr of low boil then hit the smoker for smoke flavor for another 3-4 hours depending on the size. Very spicey exterior with a juicy tender inside.

I've done the same with wings and thighs. Gives it good flav for sure.

Why wouldn't you just use it as part of the rub? Boiling it doesn't make sense to me. Wouldn't it break down the top fat?

Forget smoking. If you're going to boil it, might as well just pour some liquid smoke & ketchup over it and call it BBQ.

To each his own, I love crab boil seasoning, on seafood corn, potatoes, garlic and mushrooms, and nothing else. And boiling is just not the way I cook any type of meat.

Just use it as a rub if you want that flavor. There's a reason it's a "crazy" cooking method - it's not the best way to do it.

I guess its like the microwave steak experiment, hard to believe it would be worth a crap. You need to try it to make a reasoned decision. The brisket tastes just like it would if you smoked it for 8-10 hrs low and slow. It cuts the time down, adds a lot of flavor, and pretty much idiot proofs the meal if you dont let the smoker get to hot.

Be scared of vampires and zombies, not boiled meat!

How do you add the meat flavor back in to the meat after boiling?
The stock you make as a by product contains the meat flavor.
My suggestion is to learn how to smoke a brisket before you mess up a good brisket. Check out amazing ribs, or one of the numerous BBQ websites to get some idea's.

FYI, I have been competing in BBQ competitions at an amateur level for 10 years or so. I'm no pro but have done a lot of studying of my hobby. In my research, most of the best brisket guys in the competition world have now gone to a 'High Heat' cooking method. Temps average 275 - 375 cutting the cook times down greatly with out losing the brisket flavor and replacing it with crab boil.
I have had great success with the method.
Boiling is considered ketchup on a prime filet by the BBQ guru's.

And FWIW, I've never boiled my meat. Yet. I've had boiled ribs that were grilled afterwards and they were good and tender, though they were not boiled in crab boil. Hell, I'd try it. Who cares how it's cooked as long as it tastes good and is tender?

I think most on here would be better served learning and mastering basic techniques rather than looking for some kind of magic shortcut or trick like using crab boil on a brisket, or microwaving a steak.

And you had to slather the ribs in sauce because all the flavors gone. No thanks.

I have added a little crab boil to the water when making corned beef n cabbage. Those that have tried it, liked it.
