Biscuits are made how?

Been living in Europe for awhile, and all of a sudden, I needed biscuits, grilled, with butter and Steens. Just like Franks does in BR. Biscuits don’t exist here. Found a place that specializes in American breakfast, and the biscuit was a hockey puck.
I haven’t the faintest idea how to make them like Franks. Or at all for that matter. Anyone have a recipe they fee is similar in fluffy/density ratio like Franks? Or just so damn good I need to make it?

Here’s my recipe. This is a double batch, cut in half for a single. Can also sub butter for lard to make dinner biscuits that are more meaty:
* 4 cups (480 grams) all-purpose flour, plus more for dusting the work surface
* 1/2 teaspoon baking soda
* 2 TBSP baking powder, aluminum free
* 2 1/2 tsp kosher salt
* 12 TBSP butter, very cold
* 2 cup buttermilk, very cold
* melted butter for brushing baked biscuits, if desired
Mix dry ingredients, cut in butter by hand, add buttermilk
Preheat oven to 375, put biscuits in and crank to 425 for a little extra rise. Bake for 12 mins
Fold the dough over a couple of times in it self but don’t work too hard. Gluten strands will build up, they’ll get tough and won’t rise. Don’t twist when you cut them out. If you use a biscuit cutter go straight down, or form the dough into a square and cut into squares with a knife.

Anything like Bisquick and American style sour cream will not be easy to find in Europe.

Two key things to make good biscuits:
--proper flour
--don't overwork dough.
In the US, you'd want to buy a lower-protein soft winter wheat flour, like Martha White or White Lily. Those are around 8.5% protein, whereas AP flour is 11.5%ish.
In Europe, the flours aren't classified by protein content, but rather by ash content. Look for a T45 cake (often bleached) or pastry flour (usually unbleached). Using the "right" flour makes it far easier to get the correct texture. If you can find self-rising T45, that's the best choice.
The absolute easiest biscuit is a cream biscuit. Stir together 2 cups of self rising flour and 1.5 cups of heavy cream. Drop in blobs on a greased baking sheet, bake at 450 F for 10-12 minutes.

Still my favorite at home. I’ve tried a few homemade biscuit recipes, but I still prefer Bisquik made with buttermilk.
