Done. Did w/ oxtail, short ribs, and chuck.

Smoked the meat/consomé for half the time with the lid off and finished in the oven w/ lid on second half of cooking time.

Came out baller.

Thanks for the inspiration! Been meaning to do this for a while.

I’m making these every freaking weekend, they’re so good.

I did half w/ corn tortillas and half w/ flour.

I know it makes me a dirty gringo but the flour was tops imo.

I did the same and agree! The women who make tortillas at Superior are top notch. Not a bad price either. Less than 50 cents per.

I agree, i like making dishes that take some time as well, i just never thought of tacos as a dish i'd spend half a day cooking for. It looks phenomenal, so much so i might try it, but i think pork would be best.

Agreed. Also it made way more that 1 meal. Going to last a while.

Next time, I may just try smoking the meat without the consomé for a while and then adding it to the Dutch over for the rest of the braise.

Also, next time will prep the adobo and marinate meat a day ahead. Should get more flavor out of it and will make the cook day much easier.
