OK fellas. I hate to burst y'alls bubble but my 20 gallon pot overflowed just shy of 20 gallons.

A 5 gallon bucket with 1/2 and gallon increments marked on it. I filled it up to 4 gallons and poured it into the pot. I did that five times. The pot overflowed on the 5th bucket with less than 1/2 gallon left in the 5th bucket.

Well Rat, he's saying your calculator is way off

In my 20 gallon pots I do 25 pounds of rice with a 2:1 meat to rice ratio(30 pounds chicken and 20 pounds of sausage) with 16 pounds of veggies and slightly more than 5 gallons of water. It's 3/4 of an inch from the top when all is said and done

Yeah, I don't get it. The calculator jives with what you're saying exactly.

Every feedback I've had from people cooking big pots has said it was spot on, until this thread.

With all due respect to doubletap, I'm not changing it. It just doesn't make sense to me what he's saying.

Let's set the record straight. I never once referred to the Jambalaya calculator, accused it of being way off, or asked that you change it. I think it's a fantastic tool. I just wanted to share my process for cooking a big pot.

Is it possible that your 20 gallon pots don't actually hold 20 gallons of liquid? I verified mine this morning. Maybe you need to do the same.

No, you didn't and I should have acknowledged that in my last post. I just think there's something off about this whole thing.

We always brown Temple first, remove, briefly brown the sauasge, remove, cook down onions, add meats back to pot and stir together before adding water. And we only use about 1/2 cup of oil at the beginning, less to skim later, as that's the part I least like. Of course the guys that have beaten us out in the Exxon cookoff several times don't take anything out as they go, so maybe it doesn't matter. Looks like a nice pot, but man, I'd have been scared to put so much in a pot that size, looks like a good outcome.

ETA: I have found that the bigger the batch/pot, the less water than the usual 1 gallon/5# of rice I use.
