How often do you use your big jambalaya? I might use mine 1-2 times a year. Is there any specific way you Store it or prep it to cook?

Not really. Cleaned, oiled, lid on, in the stand in my shed. It's always ready to cook in. What are you currently doing?

warm the pot up, very light coat of mineral oil and let it be, mineral oil will not go rancid and will be okay for several years

This and only this. Do not use regular cooking oil or bacon grease, etc.

On average, I use my 80-gallon 3 times a year, my-30 gallon 6 times a year, my 20-gallon 10 times a year, my 15-gallon 2 times a year, my 10-gallon 0 times a year, and my 5-gallon 1 time a year.

Clean them and rub them with oil. Works for me.

I’ll see if I can dig one up. Or take a pic next time I pull her out the storage shed.

Think this one is 80, not mine but I have cooked in it several times

ETA, not a 80 gallon pot, it holds 80 pounds of rice , not sure how big it is

Light coat of oil and keep the lid on. If you don't use it in a while, just throw some water and boil it to help remove the rancid oil .

like others said, clean and lightly oil

I throw a single paper towel sheet in it to absorb any moisture...not sure if it makes a difference, but an old time jambalaya cook told me that's what he did
