Best way to eat left over fried chicken?

Iv'e gotten to the point that I think cold might be the best.

Microwave sucks. The oven dries it out, even If I put it on 225 it still seems dried out. Especially White meat.

Im thinking about just leaving it on the counter for a few hours before eating.

How do you eat it?

microwave for a minute then into the air fryer to crisp up the skin

Oven 350 x 25 min for leg/thigh quarter. Never white meat- to dry

Fried chicken pizza.

Remove the cracklins from the skin and reserve.
Remove the skin and discard.
Debone the chicken.

Roll out some pizza dough.
Top with a thin layer of mashed potatoes instead of pizza sauce.
Top with chicken.
Top with cheese.
Top with reserved cracklins.
Bake until done.

Serve with chicken gravy or ranch as dipping sauce.

Reheated in convection toaster oven, 400 degrees. Low temp in oven is why its drying out: high temp for a shorter period of time. Heat it quickly while recrisping the skin.

Important to note, you are reserving what I call the "cracklins" from the skin. This is the flavored batter that the chicken was cooked in and gives it the great flavor. Fried chicken that has been left in the fridge over night will have rubbery skin. It is tough, stringy, and hard to eat. The pizza cooking process doesn't change this in my experience. By reserving the crispy cranklins, you are keeping the texture and taste without the chewy skin.

What is else spectacular is using all of the chicken to make chicken pot pie. Fried chicken is excellent in one.
