Best sausage suppliers both fresh and smoked

Fresh........Majories in Boutte has a great fresh sausage made out of rib eyes and I will always pick up 10 lbs when traveling through. I worked there as a student in the 1960's


Smoked..... Central market in Luling Texas has great smoked sausage links, 50 for a hundred dollars. The smoking cooks the sausage about 80 percent and it is easy to grill and serve.

I make my own every year. Big group, we usually make between 500-1000 lbs

We won a gumbo cook off with it in our Gumbo

Deer sausage in gumbo is good too imo. It'll tickle your taint in red beans and rice as well.

Just to pick up on a regular shopping trip, I like Publix's fresh sausage. The chorizo is my favorite. I smoked a pack of it last week and made a big skillet of fajitas. We ate on it for a couple days.

Oh we make deer sausage too if We’ve killed.

We’ve made duck sausage,
Alligator sausage,
Beef sausage.

I’m eating a piece of buffalo chicken sausage from rouses now.

Dissatisfied. I don’t care for the texture and it’s very crumbly

There is a place in rural oregon I like to stop at. They sell a lot of great jerky too

I mean if we're talking where we live. I live in Prairieville, Louisiana. Home of the fighting spec home builders. We got the Verons, we got the Veillons. Got some joint called the Meatatory making sausage on Airline that I want to try.

Most of the sausage from the Hill Country doesn't appeal to me. I just don't care much for the German influenced sausage from Black's, Smitty's, or any other Hill Country joint.
Louisiana sausage just tastes better.
That being said Central Market in Lulling surprised me with theirs. I found it more akin to our style than German. The smoked was excellent. I almost always stop and grab some when passing through.

Benoit's in Addis has some great fresh sausage. It's the best one close to my house. Their smoked sausage is good too but I find it a little dry. The fresh is perfect. Rouses makes a good fresh green onion sausage as well. Veron's is good and if you can get the original veron's (fresh or smoked) from Veron's Supermarket in Lutcher it's hard to beat. Supposedly it's the original veron's recipe before river parish bought them out. But the river parish version is still pretty good

You’re making 1,000 pounds in a day? Tell us more about this. That’s 12 cases of butts. What meat are you using? Grinder, stiffer, seasoning, etc?

You used it in gumbo, so are you smoking it?
