Hoover.
Lot's of good options there, but no fine dining. Hit up Mr. P's for lunch and get a sandwich. If you still have room after that, walk next door and get ice cream.
I wish Tip Top Grill was still there. Food was OK, but the views were amazing.

Not quite the same view, but close to where OP is staying is a small, local coffee shop right across the road from where TipTop was...

If we are talking trendy flavors though, that is a weak point. They both have largely the same menu offerings. A few differences, but nothing there to make them a not even close comparison.

Another italian option is Amore on Hwy 280. It's in a strip mall so it doesn't scream great restaurant but their food is outstanding.

Amore is a great spot. definitely a chore getting out to it, but very good as well. If it was somewhere near downtown proper, place would be as hard to get into as any restaurant in town.

Oh man, I think you’ll like it. Am I remembering correctly that you are in the cahaba heights area? It’s definitely worth a trek down 280 to try at least once. Just really solid Italian. They don’t try and do anything out of the ordinary, just take care in the things they do.

You're also close to jubilee Joe's and Costas for Italian. Actually the restaurants in Ross bridge aren't too bad either.
Theres a brunch place in there as well, first watch I believe. Hoover is full of chains for the most part, there are a few like tre Luna in trace crossing and a new brewery there.

For a cool pizza and drinks place, try Slim’s Pizzeria in Mountain Brook. They have a real wood-fired pizza oven, not gas-fired. Their Hot Honey pizza is awesome.
Johnny’s in Homewood is a great choice for lunch.

Helen is my favorite high-end restaurant in Birmingham right now. Bottega remains strong. Automatic is great. Hot n Hot isn’t the same since the move.
To those that have mentioned the Red Lion in this thread, you’ve hit very close to home for me. That place has a special place in my heart. Might stop by and see Taffy this weekend. There is some talk about reigniting the Red Lion Invitational. If it happens, I will report back. We could do a TD foursome, though it sounds like we may need more than one.

Bumping this to update.
On Friday night we went to Ovenbird. Food was excellent, and very creative. The beef fat candle was pretty cool, and the jus was awesome. The snapper collars were one of my favorite things on the weekend. We also got the fideos, empanadas, roasted chicken, and tres leches. The tres leches was excellent, and they did a great job of keeping the cake not grainy.
Saturday lunch we did El Barrio. Very solid, and I loved the chorizo meatloaf and charro beans. Would be a regular Mexican spot if we lived there.
Saturday dinner we did Hot and Hot Fish Club. For sure worth the hype and price. The crab and tomato pie was one of the better things I’ve eaten in a while. We split the steak with fried chicken skins and the snapper with satsuma gastrique and celery purée. Little more traditional than the Ovenbird menu, but was executed perfectly as you would expect from a chef with his experience.
We ate breakfast at the hotel and it was honestly gross minus the French toast, even by hotel food standards. Hotel was a stunning facility for a relaxing weekend.
Overall Birmingham was a fun city, and the downtown was pretty cool. Will make sure to stay in the city next time to try out a lot of the other places suggested. Thanks for all the suggestions from everyone.
