We have recently bought from Pat LeFreida’s and Lobel’s. Lobel’s was better, but also more expensive.

No. I live in podunk NE AL. I have places I can go buy prime beef, but not dry aged. I’m thinking about trying to dry age at home.

Look up Jess Pryles... she has some pretty in depth stuff on dry aging at home and what works and what doesn’t.

She has a separate fridge with a fan I think... pretty sure it’s on YouTube.

I just bought steaks online from Kansas City Steak Company, but only because I was given a gift certificate for Christmas. They remind me of Omaha Steaks and I am hoping like heck it’s considerably better quality.

Next time around I’m buying from Snake River Farm or Allen Brothers.

OP I got to thinking about your question and the two Rouses by my house over here across the bay from Mobile have a dedicated dry aged beef centerpiece displayed for all shoppers to view. To my understanding you just purchase the whole cut of beef after it’s aged a certain amount of days. I routinely see some tagged as sold and the meat is just waiting for pickup when ready. I won some money making a wager with my neighbor that LSU would beat Alabama in football last year and I bought one of those big dry aged cuts of meat from Rouses and had the butcher cut it up. I invited my neighbor and his family over that I won the wager off of to eat that dry aged beef and you know what it was pretty darn good.

Allen Brothers. They also supply some fine commercial steakhouses and their stuff is excellent.

Yes they do this, but I think the ones you see are mostly choice, but if you are paying I think they will age whatever you want for you.

For online I have used:

Grand Western Steaks
