We get a whole ribeye or tenderloin from Sams, slit some openings in the vacuum bag, and dry age in the bottom refrigerator drawer for 19 days.

Saw that on an Emerils cooking show probably 20 years ago.

Best steak I've ever had.

Ribeyes/NY Strips - Alexanders Highland Market

Filets - Calvins in Bocage

Ribeye Caps - Costco

All three have good selections of all cuts, just my preference.

Iverstine is good for everything except beef. They do not get prime.

Maxwells is a dirty place and they will sometimes have Prime. I hate that the filets are wrapped in bacon.

Calandros consistently has prime ribeye, prime filet and prime strips.

I hate that they are pre-seasoned and the price is absurd for choice meat.

I too have to say Costco. Great quality and decent selection. Especially when they wheel out that portable meat case with the prime cuts on many Saturdays.

Costco prime looks good, but Sams and Walmart choice always looks better than Costco’s choice. I got a nicely marbled NY strip from Walmart tonight, in the sous vide for an hour plus, then grilled for a couple of minutes. It was very good. I used Carne Crosta rub from Oakridge BBQ. Good stuff. $9.47/lb for the steak.
