We get a whole ribeye or tenderloin from Sams, slit some openings in the vacuum bag, and dry age in the bottom refrigerator drawer for 19 days.
Saw that on an Emerils cooking show probably 20 years ago.
Best steak I've ever had.

Ribeyes/NY Strips - Alexanders Highland Market
Filets - Calvins in Bocage
Ribeye Caps - Costco
All three have good selections of all cuts, just my preference.

I've had good luck buying steaks at Sam's.

Rouses
I was talking to a coworker this morning about his meat buying experience from this past weekend.
Saw a nice, thick t-bone in the case for 15.99/lb and decided to buy it. Walked over to the meat cabinet just for fun and saw that they had packs of 3 t-bones for 4.99/lb. He went over to the meat counter and asked the butcher what the difference was. The butcher said "nothing". He gave the butcher the thick t-bone back and went with the 3 pack.
I doubt I ever buy from a rouse's case in the future.

Maxwells have prime
I went Saturday after Iverstiens was OUT of ribeyes and filets. Maxwells didn't have prime ribeyes, only filets

Iverstine is good for everything except beef. They do not get prime.
Maxwells is a dirty place and they will sometimes have Prime. I hate that the filets are wrapped in bacon.
Calandros consistently has prime ribeye, prime filet and prime strips.

Chris's Specialty Meats. If you don't like what they have they will get it for you.
I like their seasoned filets and rib eyes. Filets are usually 29.99/pound. Rib eyes are usually 17.99/pound.
I hate that they are pre-seasoned and the price is absurd for choice meat.

I too have to say Costco. Great quality and decent selection. Especially when they wheel out that portable meat case with the prime cuts on many Saturdays.

I second Calandros (Siegen), their prime is always well marbled.

Costco
Costco prime looks good, but Sams and Walmart choice always looks better than Costco’s choice. I got a nicely marbled NY strip from Walmart tonight, in the sous vide for an hour plus, then grilled for a couple of minutes. It was very good. I used Carne Crosta rub from Oakridge BBQ. Good stuff. $9.47/lb for the steak.
