Because i have not had anything like the Baccala i had at a place outside of Vicenza. It wasnt great in a south louisiana terms because there is just less seasoning but it was very good.

Marcello's Wine Market Café is on Kaliste Saloom, about a block west of Pinhook. I think it's the same Marcello's as the Wine Market on Johnston and College.
I remember the Time Plaza location and saw Scott Alan Stagg play there many times. I also remember when Marcello's Wine Market was in the Shopping Center across from Brother's on Arnold Blvd.. Same place Spanky's Health Club was.
I honestly don't know the relationship between all the Marcello's incarnations, but I'm sure it would make quite a story.. I bet Philippe knows.. and likely a few posters on this board.

I can remember when Central Grocery had them hanging from the rafters.
A lot of Southern Italians/Sicilians in Louisiana actually used to make it.

Didn’t one of the Impasato kids go to jail after Katrina for some scam?
And I go to Diguilios for Sunday lunch which is a much easier time to get a table since it is so small.
I consider “old school Italian” a red sauce joint which includes a lot of those listed and for the most part what we, or at least those of us a certain age, grew up on. None of which is really Italian anyway but Italian American which was defined by the American soldier after coming home from WWII.
In Baton Rouge it would be Gino’s, Diguilios with others now gone, The Village and Little Italy. Even though Jack Sabins had great Italian (as his mother was Ms Fanny Distefano-who owned The Village) it was considered a steak house.
And I don’t consider the newer version The Little Village anything at all other than overpriced.
The best spaghetti and meatballs I’ve ever eaten is Moscas. Venezia has one of the best pizza pies in the city and gets no recognition for it.
Ninos is one of my favorite restaurants but he himself will say he isn’t old school Italian. When he bought the place he said he was doing away with the red sauces and he lost a lot of business because of it. He has since grown a very loyal clientele none of which would mistake the carrot pesto for their grandmothers.

Baccala. With like a grilled corn cake. Like I said it wasn't great but good. It needed to be saltier.
Found the place we we're at. Trattoria alla Baracca. My wife and I met up with a big group of her family from the area. Lunch started at 11 and we didn't leaft till 4. Talk about an experience.

I’ve had the Basque version (bacalao) and it’s more about the fish and less about whatever sauce that is. I do bet the Italians do a good one though.

Because the Food Board has the most bizarre downvoting crew known to mankind. I guess they think they're winning SOMETHING.
My grandmother made sort of a crab cake thing with the old dried cod. There's also a version made in a tomato sauce. Sadly, I don't think you could find either in a restaurant around here. Sort of like Trippa, which Adolpho Garcia's old Italian spot used to do a great version of, or Maximo's old version of calamari in tomato sauce - which both were dead-ringers of old home American-Sicilian dishes that I can no longer find.
