Best.. In no particular order…
Chinese - not the order by number “NY Style” Americanized bullshite. The real deal; where the variety is huge from noodles, dumplings, hot pot, in addition to so many different regional variations. If offered; I’d do proper Sichuan every day and twice on Sunday.
Japanese - similar story to Chinese. Huge range of dishes and regional variation. Who doesn’t love ramen and wagyu?
French - it is what it is. The epicenter of European gastronomy IMHO. Kiss the ring; these guys get it.
Mexican - the regional stuff is truly amazing. The variety from the Norteno to the Yucatán is amazing. Rich, flavorful, colorful. The best food in the America’s happened here. Accept it.
Ethiopian - just plain delicious and shows the world what being in the middle of the spice roads will do.
Worst…
Baltic cuisine - the lasting impact of the Russians in the area is food lacking flavor and suited to poverty. There’s a reason there’s not a popular Latvian or Lithuanian spot in every major town. Amazing people; but, the food sucks.
British - just sort of falls flat in every regard. There’s something magical about a great fish and chips; but, the reality is they miss even on that more often than not.
Cuban - even as a Florida resident in the center of a Cuban community I don’t get it. The food is bland.
Most underrated…
Korean isn’t going to get much love; I think their cuisine is very unique among Asian offerings.

Mostly because there’s no Korean restaurants around here. I ate some Korean fried chicken in Dallas that was among the best chicken I have ever had.

Several in NYC and later in Boston. As a youngster I found it unique and fun. Interesting experience, but really far from great food.

I spend way too much time in South Florida and they force feed us Cuban food for every event. Not only is there only like 5 things they make, but they are all so full of citrus and salt that it’s difficult to enjoy.

I 100% agree with this take and I’ve always lost a lot of weight I didn’t want to lose because I was living there. Last summer I was in Singapore and a friend told me I absolutely had to try this super fancy highly rated restaurant that featured classic British cuisine. We ended up going, and it was seriously a top 10 dining experience.

Totally agree.
Just in the past year we have gotten into both Korean BBQ style and hot pot and both are amazing and seem relatively clean and healthy too.
Not enough exposure personally to the overall genre to rank but certainly worth noting.

I like cuban food but sometimes I would love to dump some red pepper in it. some things I like about cuban food is that it is usually quality fresh ingredients, they give you alot, and the cost isnt very high.
