Besides frying, what are some good catfish recipes???

Catfish Meuniere and the one where i poach it in evap milk and onions are my favorite

yeah but grilled catfish just falls apart...too flaky for the grill IMO

This is one of my Mom's Recipes, quick and simple, but will leave you licking you plate.

1) Season fish as you like.
2) Put in buttered casserole dish.
3) Slice some Onion on top.
4) Pour a can of Creme of Shrimp Soup on top.
5) Bake at 350 for 45 minutes.

This one is a proven dish............

Tigre, would it make me unsophisticated, if I say fried, is the only way I'll really eat catfish? Or, is that like uber-sophisticated?

I used to have a really good recipe for Parmesan coated catfish baked in the oven. This is the best I can do from memory:

Mix together flour, salt, pepper, paprika and shredded Parmesan cheese. Dip catfish in melted butter, then dredge in flour mixture. Bake for about 20-30 minutes.

Probably just as bad for you as frying, but different.

Years ago my wife and I had an unlimited supply of catfish fingerlings from Des Allemands, likely the best catfish in the world. Since we were poor we took full advantage of it and, of course, started out just frying it. We got tired of fried so we tried baked, chowder, grilled, courtbullion, probably dozens of different recipes.

Guess what? Catfish was meant to be fried. It just falls apart if you do almost anything else with it. Try different coating and sauces, but to me, its best fried.

Spahrs!! Best Catfish and the Best Bloody Marys!!

They now have locations in Houma and Thibodaux as well!

Catfish chips and corn nuggets are awesome! I am good friends with the owners, but I was saying good things about the food long before I ever met them!

Spahr's kicks arse. The Ann's Quick Stop just up the road (don't know if it's even still open) used to make a great fried soft-shell crab poboy. The woman behind the counter had ONE tooth. It looked so lonely in her sweet, sweet mouth.
