Stopped by Yesterday, this was the fix Covington needed....(Lafayette-esque).

Hwy 190-right past Chick-filet on the right. (Headed North)

Smoked boudin, Cracklins, Ribeye steak wraps (jalapeno, cream cheese & bacon). Every possible stuff meat you can imagine....plus whole hogs prepped.

Dining room onsite...

PJ the owner-who was very helpful and friendly said it's there sixth location in Louisiana.

Place was popping and they dont officially open this Saturday...

Give it a try...

I get these every time I stop here. Try the smoked wings and chicken thighs too. Their seasoned ribeyes are excellent.

How do you cook that without over cooking the steak?

the wraps or the seasoned ribeye?

the wraps are smoked and they are incredible. You can hurt yourself on those things.

Is it a steak wrapped in bacon or is it a wrap with a tortilla?

Sounds like a steak version of armadillo eggs to me

I don't know if I'd use ribeye meat for that purpose

here is a picture from their website (middle pic). they are really good. jalapeno stuffed with cream cheese, wrapped in ribeye and then bacon > smoked.

yes. Smoked to be precise. But they also have them in the fresh meat section for take home preparation.

unless "wasting" a ribeye on such a pedestrian concoction is so offensive to you and soo beyond the pale of decency, you just cant brign yourself to cook/eat them.
