Beginning A Keto Diet--Please Answer Some Questions

Have seen the various posters recommending a low carb Keto diet and have decided to give it a try. I am trying to stay at 15g carbs and under until goal weight is reached and then under 50g to maintain.
I began the diet a week ago and am finding it very hard to stay under 15g carbs. I do eggs for breakfast. But for lunch and dinner I pair a protein with usually cauliflower. Thought I was doing well, but cauliflower has like 6 or 7 carbs per serving. So 2 servings of cauliflower(lunch & dinner) and I'm at 13-14 carbs already. Not including the 2 carbs in my egg fritatas, 1 carb in my almond milk, or the other various 1-2 carb hits for stuff like cheese.
Besides only consuming meat and eggs, what can I add vegetable wise for a side that won't kill my daily carb goal of 15g?

Other than that, I'm hitting calorie goal of 1500cal or under fairly easily. I'm not hitting the fat macros of like 130g fat though. How important is that? I mean thats a lot of fat and I don't have that many calories left over to just be doing fat bombs.

Otherwise I'm enjoying this diet. I'm never starving, I feel better, and I already lost about 7lbs, although I'm sure it's just water weight.

I don't think I ever came close to the total fat number. You need to be around 20 net carbs. 15 is borderline impossible. I was usually pretty low because I only got carbs from raw spinach but most people would find it impossible to keep things below 15 carbs.

I bumped my fat content with olive oil on the spinach. Lots of eggs, hamburger and cheese. I ate a lot of chicken too. Less fat but I don't think I dropped out of Keto, but since I never checked with sticks, I have no clue how often I dropped in or out.

Depending on your protein, you could wrap it in lettuce and that can be your "side".

20g seems much more realistic. I'd definitely like to keep some vegetables in my diet.
As far as the fat. I feel really weird just eating red meat, real butter, eggs, bacon, full fat sour cream etc when for the last 10 yrs I'd been doing ground turkey instead of beef, chicken breasts, egg whites, turkey bacon etc. I really hope my cholesterol isn't through the roof when I go for my annual in September.

When I'm going for ketosis, I eat nothing but meat, cheese, eggs, mayo, and maybe some turnip greens.

I usually grill pork chops, hamburgers, chicken thighs, etc. and eat those throughout the week.

I believe more recent studies have shown that dietary cholesterol doesn't really raise your blood cholesterol the way we were raised to think.

The fat macro isnt all that important to hit. If you find yourself starving all the time up your fat intake a bit.

Good to know. I've been over on the Keto Reddit and they make it sound like it's really important to hit the fat macro. They're eating spoons of butter and putting butter in their coffee. One guy says he does shots of oil . I just don't think I can do that.

I get that cholesterol is being thought of differently, but a diet of 90% red meat can't be healthy? Or is that changing too? I guess it's just ingrained to eat healthy protein like Turkey, chicken etc... Of course if I do that, i'd never come close to that fat macro.

I can eat 3 servings of rice in one sitting - probably 60g of carbs - and not bat an eye. Put a little soy sauce on it and BAM.

I do too, but soy sauce just makes it MORE better, if that's possible. And I love a bowl of plain rice with some Tony's on top. Im worse than the Japanese when it comes to rice.
