Beef Tongue

Welp... I've finally done it.

I bought a cleaned, stuffed beef tongue from Hebert's a few weeks ago. I was going to brown gravy it for rice & gravy, but I kept thinking about putting it on the egg.

The Rubicon was crossed around noon, today. I'm going to nom, nom some when it comes off as part of a charcuterie board, thin chill to slice for sandwiches:

Rye bread from Poupart's
Smoked beef tongue
German mustard
Sliced onion

I'll try to get pics up.

Nice. Where I live, several restaurants serve pickled beef tongue. It's actually pretty good.

I sometimes order the lingua tacos, but I haven't cooked one at home.

I noticed that a WalMart that carries a lot of Mexican items regularly has tongues in the meat section. Do Mexicans make anything with it other that tacos?

My buddies mom use to pot fry it. I make sneak one into the black iron pot over here and see if I can sneak it on the wife's plate.

Actually, so no one is confused, it's Lengua.

Michael Voltaggio (Top Chef) did a demo on sous vide tongue which I've yet to try, but it's definitely on my to do list.

ETA: Hmmm...not sure what would anchor this thread except for the short title.
