Anyone know of a readily avaliable beef sausage I could use in jambalaya?
Was asked to cook some for a niece, but was asked not to use pork.

Costco always has some (might have Bison too). I've seen it occasionally in groceries. Alexander's used to make it.

I believe Richard’s makes an all beef sausage.

Don’t know where you are. HEB store brand is really good. Maybe your grocery has their own brand.

Manda and kiolbasa make all beef sausage but they are not kosher. If you're looking for something kosher, there's not much kosher beef sausage around BR. I've cooked with all beef sausage in jambalaya a time or 2 and it tasted weird.
I would strongly consider making a separate small pot with chicken & chicken sausage or chicken and sliced smoked portobellos with the portobellos being a top choice. I've made it before, it's really good and other people will try it just out of curiosity.

I guess I could just do chicken sausage. They didnt say kosher and I don't think I could make it kosher, just asked for no pork.
I didnt realize some of this was readily available at the local store. I'm going to run to rouses and see what they have.
I was worried that it would be weird. I wanted to make a small batch this weekend to try.

I had the same request once and did Manda beef sausage and chicken. Came out good enough, but it’s definitely not as good as pork sausage. You don’t realize how much flavor a good pork sausage provides until you do one without it.

My son is weird about pork. He thinks of pigs like he thinks of dogs and cats. He has no problem with chicken, beef, etc. It's his weird thing I hope he grows out of.
There are lots of really good Turkey sausages out there, in all styles.
And by "really good" I mean not as good as pork sausage, but good for what it is.

I'd get all my regular ingredients and make it. Then tell her it was all beef sausage that I used.

I use my own smoked jalapeno chicken sausage, chicken thighs and a fatty beef chuck when I make a non-pork jambalaya for my Muslim friends in Abu Dhabi. Its pretty good!
I prefer pork Boston butt & picnic, chicken thighs and smoked pork sausage or andouille for my jambalaya, but the above one is actually good.

Could always just cook it without sausage if you can't find a decent option.
