Red beans are kidney beans. So are white beans.

To answer your question about creaminess, cook long and add fat. The fat makes it creamy.

You can mash up some to aid in breaking down the beans into the "sauce".

So white beans (Great Northern and navy) and pinto beans are kidneys.

If you're wanting true Natchitoches style red beans you need to cook longer than you would for New Orleans style, and don't skimp on the Tabasco. 7oz per batch of beans minimum.

I don't think this is correct. I see she is a nutritionist. Maybe it's just confusion about colloquial names for beans.

Great Northern beans come from the same plant species that green beans come from. The Great Northerns are what's inside the "green bean", which is the pod.

It all depends on the harvest time.

I made a pot rather recently with the Blue Runner brand dried beans. I think they were on sale or something and I thought there's no way they could be much different than Camelia. God, I was wrong. I cooked the shite out of them and they wouldn't bread down and get creamy for anything. The color was way too dark as well, I thought. I eventually got them decent enough, but they still were not nearly as good as when I use Camelia.
