Beans, beans good for your heart...

Any reason to cook any other beans/peas other than red or white?
Of course black eyes for New Years.
I’ve tried lentils, crowder, even the big white limas.
But to me I’d rather stick with red beans or white beans (small ones not the big navy beans).

I love all of them except the carbs.
Pinto, black eye, black. I like the yellow eye you can find at Whole Foods. I have fresh Lima’s and blue lake green growing now.

I hated the way my dad cooked limas when I was a kid. Until recently, I don't think I've touched them in 30 years.
Langensteins had some which I grabbed by accident thinking they were white beans. Realized my mistake when I got home but they turned out to be pretty damn good.

I do black beans at times.
I cooked a big pot of red beans last night. Can't wait to eat them tonight. Red beans are always best reheated after a day in the fridge.

Cook a pot of baby Lima’s with some good pieces of Tasso and in the last ten minutes add peeled shrimp.

I did this at the camp a few years back and everyone laughed when they saw it being cooked. Not anymore they don't.

You know this is an old southern dish and I’ve had it at Dooky Chase’s several times and for some reason people just don’t get it. And yeah look at you like you are nuts but man it is good. Especially in about a month when I have fresh Lima’s.

Black beans slow simmered with the juice and rind of an orange, onion, and lots of garlic turns out amazing.

Baby green limas with fresh (or dried) shrimp, or BGLs cooked down with bone-in chicken thighs (brown the thighs first) is serious DTB (down the bayou) home cooking. In the same vein is BGLs in a roux, or petits pois in a roux (with onions & garlic, bien sur).
I was raised on peas & beans: little white navy beans, red, black, BGLs, lady cream peas, crowder peas, purplehulls, little brown field peas (esp cooked with lots of salted pork), blackeyes, pinkeyes, speckled butter beans, dried white limas, fat white Italian style canellini beans, pintos, etc.
If you want to geek out on beans, check out Rancho Gordo, purveyors of a plethora of exotic beans. LINK Expensive, but what a variety. The Rio Zape variety is especially delicious, IMHO.

I plant purple hulls simply so I can sit on the back porch and shell peas & think about the ancestors. How tickled my grandmere would be that I have ceiling fan on my screen porch! Peas are stupid easy to grow, too, and there's not much better than fresh peas cooked w/ a little andouille.
