Bacon grease, was refrigerated but got left out

So I save my bacon grease in a little bowl in the fridge. I don’t strain it so there are a couple crumbs of bacon in it. It got left out for a day on the counter.

Think it’s still good?

Of course. It is full of salt, an excellent preservative. Plenty of people leave it out for extended periods of time with no ill effect. Once upon a time, erryboddys southern grammaw had a little round metal tin labeled “grease” sitting next to their stoves. It had a lid with built in strainer to separate the chunky bits. You poured off drippings and used oil into it, and it was sitting right there when you needed a dollop of it. Way more environmentally friendly than a can of spray oil.

I often leave it sitting in my cast iron skillet for a several days.

I figure it's seasoning while it sits.

It never goes bad.

It ages like a fine wine.



Anyone ever tried bourbon barrel aging bacon grease?

My only thought was like mayo. (Uh oh here we go). Some don’t put there mayo in the fridge and it’s fine but once it gets refrigerated it has to stay refrigerated.

So I didn’t know with the bacon bits in it, if it may not be good after being refrigerated and getting warm again.

I want to cook down some chuck roast this weekend and want to use it

I keep my bacon grease in a small mason jar on the counter next to the range. Never have refrigerated it. If it worked for grandma, it works for me.

Pig farming ain't exactly great for the environment, either. There are better arguments to be made for the use of bacon grease, but the environment isn't one of them. Being delicious is the best argument.

I never put my bacon grease in the fridge. I have one of those cans that look like the old time coffee cans with a strainer on top right under the lid. I pour my hot bacon grease into the strainer, let it drip and when done use a paper towel to remove any bits and pieces.

Then I simply cover it and leave it on my countertop. I use a lot of bacon grease for rouxs, browning off meats, etc. so it gets used fairly quickly. I never refrigerate it----and I've been doing this for decades and have never had any issues from using room temperature bacon grease.

It should be fine. May go rancid more quickly if left out, but that is probably all it will do.

Life insurance paid up? If yes, you are good to go on all sides.

That was my logic in putting it in the fridge since I don't strain it, it may last longer in there. It was the cold-hot-cold thing that gave me pause.

Yep im covered so ms GT would be ok

if its "just grease" and no bits of bacon in it then its fine.

if it had bacon bits in it why risk it?

It has bits...not many but some. I do it in the oven and just pour it in a small bowl.

It depends how much fresh I have by tomorrow night when I want to use it.

My grandmother kept her bacon grease in one of these on the stove.
