Back to basics - Simple beef pot roast w/pics

Chuck tender (mock tenders) beef roasts were on sale, so I picked one up, otherwise I would do chuck.

Everything's ready to go. The only thing not pictured here is the Quebec (Montreal) seasoning I used to season the beef before searing, and I haven't trimmed the silver skin from the underside of the roast yet. Notice my secret weapon, Bulldog Tonkatsu sauce.



Searing the seasoned meat.



Sauteing the onion for about 8-10 minutes, then deglazing the pan with red wine.



Into the crock pot, covered halfway with beef stock. Low for 8 hours.



Never underestimate the power of your crock pot.

This is gonna be good.

That roast looks too lean to be a chuck or pot roast

It's the mock from the chuck shoulder, also known as Chuck Fillet Steak, Chuck Clod Tender, Shoulder Tender, Petite Fillet, Fish Steak, Chuck Tender Steak, Tender Medallions, Shoulder Petite Tender.

So yeah, technically it is chuck. Much leaner than typical chuck roast, but very flavorful.

See, here's the thing. Within the six weeks that it says it can go bad, I end up having a few glasses with beef dishes, cooking with it, etc., so I usually have a box on hand and it gets utilized before it turns to vinegar rather than tossing half of a magnum a couple of days later.

Those three glass boxes for three bucks come in handy for cooking too. I'm not ashamed to admit it. Those tiny dollar bottles of wine are good to keep in the pantry for cooking purposes too.

Same here. They come in very handy.

That'll eat nice. I love a good pot roast. You had better have some cornbread nearby. People keep talking about crawfish boils, and I haven't made a complete run through my cold weather meals yet.

did a pot roast Sunday
I didn't have white potatoes so I used sweet potatoes
the gravy was crazy good

One recipe I researched called for sweet potatoes. How did that turn out? Were they mushy?

I didn't get back to it in time. It cooked on low for about 14 hours and was drier than happy hour at the Betty Ford clinic.

came out fantastic
mine was in the oven 2 hrs, I added the sweet potatoes and mushrooms after the first hour

I buy the little Sutter Home 4-packs of white wine all the time for cooking. I know they say, "only cook with wine you'd drink", but for some reason I only follow that rule when I cook with reds. For whites, I'll buy the minis.
