I remember seeing a vid with a young Anthony Bourdain and he used a big ol' bottle of cheap arse red for his beef bourguignon demonstration. He went out of his way to scoff at the use of fine wine for cooking that particular dish. Obviously, you don't want to use Boone's Farm, but I'm easy when it comes to using cheaper wines in cooking. Sort of like when making a bloody mary. It doesn't matter if you use the best vodka.

me too
i went with chuck roast, onions, carrots, mushrooms, sweet potatoes, garlic (lots), red wine and stock, and right before serving i stirred in some steamed green beans and parsley, served over cooked barley. i'm a big fan of the barley in lieu of rice
