Well glad to be appreciated, I won't darken this TD board again trust me. I'm very happy with life right now. I have a great job that treats me fair. My family is doing well and having successes left and right. CCBBQ is still a very sore spot in my heart. Having your intellectual property stolen then done sub-par sucks. It happens too often in that city. I wish the best for James I feel sorry for anyone that has to deal with those owners. Stay classy NOLA see yall around with my alt.

Have you ever smoked onions? I went to a place with these smoked onions they put on the pulled pork and chipped beef sandwiches and they were oh so good. It looked like they were in a little oil, as well.

I LOVE smoked mushrooms. Great alone, but in a creamy pasta sauce (not alfredo), they're terrific.

I've seen people "flower" them, add a splash of vinegar so it pools some in the flower, and then smoke them that way.

I have some sympathy for that situation, and I would probably still eat your BBQ.
But man you sure seem to be blaming a lot of other people/circumstances for your problems I.e. you can’t succeed in Nola without blowing someone or having deep pockets. Your personality seems to be the common denominator. Let’s be honest, you sit around a fire and watch meat cook. Acting like you are god’s gift to BBQ because the local newspaper is reporting about new restaurants in the area makes you seem like a tool. My two cents is that you could use a couple tablespoons of humility. But carry on. sharing your recipes is pretty cool of you
