According to a couple of websites like this
one I just quickly googled koi that size seem to generally be worth $100-$350, and they even have one there that they are trying to sell for $3800. Don't know what makes that one special. Basically, maybe there is a better use for these things than eating them.

Funny Koi story:
A redneck buddy of mine took his family to Florida. The neighbors next to the house they rented had a big koi pond with some serious 2+ pounders in it. Anyway, his 6 year old son asked if he could fish in their pond. Knowing there were only koi in there they said go ahead, have a ball.
An hour later he comes back to his rent house with a stringer full of those colorful bastards. His dad took them back next door and released them... about half died.
He said the neighbors did not communicate with them for the remainer of their stay.

I used to do some commercial trapping and fishing when I lived in FL, one weekend we were out in the glades cooking up a little manatee that we'd caught the day before and a game warden happened upon us to check our gear and permits, he asked what we were cooking , it sure smelled good, we told him and he gets all bent out of shape and starts writing us up, we tell him it's how we make our living, he doesn't care, chews us out, and writes the ticket, as he was leaving he said, I just have to ask, that smells so good, what does it taste like? in unison we reply, tastes like bald eagle
