They were fine with it and had no idea what to do with them because they didn't have a place for them at their new house

Yes koi fish are edible, they're a type of carp. But you may want to reconsider cooking them:

1. Because they're usually pretty expensive fish and popular for garden ponds...so probably wouldn't have a hard time selling them and making some money

2. Consider the water they're coming out of. How often is the koi pond cleaned? Are you using any chemicals to treat water in the koi pond? Is there any garden near your koi pond where fertilizer is used and could runoff into the pond water when it rains? Wouldn't recommend eating fish that come out of water that could possibly be contaminated.
