Anything better than a brown duck gravy?

Browned a mix of 10 breast bone on mixture of teal, canvasback, and blackjack.

I had some fresh satsumas so I juiced two and let the birds soak in that and a little bit of allegro overnight.......

Yes, a browned roast gravy. I have tried to convince myself I like wild duck, but I simply dont Wrapped in bacon and stuffed is the only way for me

You aren't being patient then.....the flavor profile of a brown duck gravy is pretty amazing......

Nope. Not to me. Possibly to you. I have had it prepared by some excellent cooks, and while others liked it, I did not.

I love farm raised duck. I do not like the flavor profile of a wild duck.

Not much better than a duck gravy. Don't think I would have sullied those teal with the jacks though

Big fan of farm raised duck.
I like wild, but it's just alright to me, not great

I pot roasted some green heads I killed last week. Cleaned them whole, dropped in a pot of really hard boiling water for about 2 minutes then took out and dried, salt and pepper real good inside and out and sear on all sides in a cast iron Dutch oven. Then add about a cup of water, lower heat, cover and turn every 30 minutes adding just a bit of water if needed. Serve that over rice with about a tablespoon of the rendered grease gravy.

Pretty good.
