Anyone order other items from the MS State cheese store?

I’m a big Swiss cheese fan so I always order the Vallagret…but I’ve had the Edam and it’s damn good too.
The Vallagret is 2lbs, so I don’t think I need more cheese than that…is there anything else y’all order from them? The peanuts look good.

The salsas are pretty good, as well as the different seasonings they offer in store. Also, I’m a big fan of the jalapeño cheddar cheese. Not quite as good as the Edam, but still very solid. I haven’t tried anything from there I didn’t enjoy.

Do you freeze the cheese? I wanted to get an Edam too, but 2 lbs of Vallagret will last me longer than I care for. Shipping is $10 for 1 of them $15 for both…
I just can’t eat 4 lbs of cheese.

Clean your hands well, cut it into chunks leaving the original wrapping on it to minimize exposure, and then immediately vacuum pack each chunk. As long as the vacuum holds and it doesn't get all gassy on you, it should be fine and won't mold. If it balloons up but it's still sealed, that's due to microbes and you should throw it out. If the vacuum is broken, but it is otherwise fine, just eat that chunk next. After all, what's the difference between them vacuum packing it and letting it sit around until sold and you vacuum packing it and letting it sit around until eaten?
I've got a Vallagret that's been in my fridge for 2 years. Ate a block with breakfast Sunday. After about a year, it started developing those little crystals that you get in aged Gouda.

I have. It’s real good, but I still ordered the Vallagret instead. I get a much more local feel from it. I may order an Edam later.

Wish they sold half balls, or quarter blocks. I guess they’re holiday portions.

I keep it in the fridge in the cheese drawer. What? Yes, I have a drawer that has nothing but cheese in it.

I agree with everything said here. Vac packing works well. Keep it in the fridge. We have cut an Edam into several pieces and vac packed them separately. That works.
Gaston. I assume you could share an order with a friend. We have never had any problem eating a ball, or wheel before they go bad. Not much better than Mac and Cheese with Edam and Valligret, or a grilled cheese with either. Great on a cheese plate with your fav cold cuts and some olives. Cheddar is great. Jalapino in a crock is good. MSU Ice Cream is wonderful, but no way to mail order it that I know

We bought 16 pounds of the Edam before they stopped shipping in April. It will last us about 6 months. You can leave it in the wax until you're ready to cut it up. Then, we cut it into 8 wedges and vacuum seal.
We share with my in-laws, so it works out to about 2 ounces a week for 4 people.

Sorry, that was perhaps a little confusing. I think they stop shipping sometime in April and start again in late fall because of the warm weather.

Our friends down here on the coast are mostly State fans, and they are the ones who turned us onto this. This is a big point of pride for them. If my son ends up there I’m going to a football game early, mostly to pick up cheese.

They’ve got such a nice dairy store at State. I wish LSU would invest some money and do something similar. The current LSU dairy store is hard to get to and it looks like a public school building from the 60s. Build a new store on Highland around the AgCenter where it would be easier for people to get to.
