Anyone here buy meat from the LSU dairy store? Update - steaks cooked

I wouldn’t have bought these normally, but my daughter had $100+ left on her Tiger points, and they could be spent here. They had to be used by this week.
I grabbed the last two ribeyes, and they were out of the wagyu beef.

I’m not even sure what I’ll do with some of this stuff. The short ribs are massive, and I’ll make burnt ends out of the two chuck roasts.

I haven’t bought meat there in years, but it was always good.

Did you at least get some ice cream while you were there?

Never bought it but I slaughtered the cows, pigs, and goats and processed the meat for the dairy store to sell. Students slaughter and process the meat.

There may also be professors or grad students doing it for experiments. Any meat they have, they bring to the dairy store and sell it cheap. It is USDA inspected, they have a USDA inspector on site when they slaughter.

There's nothing wrong with the quality of the meat although it may not be the prettiest of cuts. Some of the meat is cut into primal cuts by students and then the professor and staff will cut into retail cuts for the store.

They do a similar thing at Auburn. It is always of good quality and the pricing is decent. The cuts might be a little off.

Auburn used to make a porchetta that they served on a sandwich in the stadium. Maybe 15 years ago. It was the best Stadium food item I've ever tasted.

Odd to hear praise for Jordan-Hare stadium cuisine, but I never tried that. I think I have seen porchetta in the Meat Lab (where they sell meat and eggs and maybe cheese). I've heard they used to sell dairy products and ice cream but that must have been long ago.

That's where it came from. They had signage about it being made by the College of Ag. My recollection is that it was only served in one concession stand. It was upper deck in the corner where the big screen is now I think. Maybe they knew they only had enough supply to offer it from one stand.

It was really an amazing sandwich.

Ok, this is creepy, but my daughter went and got a bunch of meat for me today too.
And, we have the same marble counter tops.

I did not know LSU sold beef at the dairy store, will have to check it out next time I am down. I have bought beef from the TAMA meat center and it was good for the price.

I noticed you mentioned you got the last 2 ribeyes. Does anyone know if they routinely OOS on steak or was it just a fluke?

From what I understand, they restock every Tuesday.

I never went to LSU but tried to go to the dairy store one day earlier this year, I couldn't figure out how to get to it when school was in session. I assume you may have to park a little ways off and walk if school is in?

I've bought and been pleased with the LSU meats sold at the dairy store for several years. Only concerning time was when I bought a leg of lamb. It was double wrapped. The neat and clean outer label said LSU. The inner label said "Product of Australia"! I sent an e-mail asking what the deal was, and was told the meat was leftover from a study that was sampling commercially-sourced lamb. Selling lab samples is probably illegal.

Yeah, it's within campus where you can't drive. There are commuter lots not too far away across the Nicholson Extension, but IDK how often they're out there checking for parking tags.

I assume they still have paid visitor spots, but no idea.

There should be a little cut out on S. Stadium with 4 or 5 spots that are specifically reserved for the dairy store.

Seems like a good way to use leftover Paw Points or whatever they call them these days as they're meal plan $ that expire each semester.

Much better than going to to the Mini-Mart (RIP) and clearing the shelves of hot pockets and chips because they were use 'em or lose 'em.

I drove up to the guard shack, told her I’m going to the dairy store. She issued me a 15 min parking pass.
Very simple.

Finally got around cooking something from the dairy store. I went with the ribeyes.

After the sous vide.

A little on the tough side, but not too bad.
