Anyone have any non traditional crock pot roast recipies

Looking for something to change up my traditional receipie. I usually coat a roast in salt, pepper, flour and brown in a pan with some olive oil and butter. Then make a gravy with some onions, red wine, and a little bit more flour. Throw in crock pot with carrots, beef broth, celery, thyme, bay leaves, and garlic.

Add a jar of pepperoncinis, garlic, onions, bell pepper, oregano and basil for Italian beef.

Add a tablespoon of tomato paste to your gravy.......gives it a rich flavor.

I know it is a short cut, but we use the mccormick pot roast spice pack.

Season your pot roast with tony's or some other cajun seasoning.
Put roast into crockpot with 1 bottle italian dressing and 1 jar of the heinz brown beef gravy.
Cook 8-10 hours on low. Serve over mashed potatoes and peas.
Super easy and very good.

Then switch to pork every now and then, more versatile.
Toast fennel seeds then grind. Coat roast in fennel, coriander, salt, pepper.
Also, coat roast in a coarse mustard for a change.

Serious question here: if you are browning the roast and making a gravy, why bother to switch to the crock pot? Why not just pop on a lid and do a stovetop braise? Seems like you're just dirtying another pot. (Ok, maybe if you need to leave the house for 8 hrs, or however long the crock pot takes to cook a roast.)
If I tried to crock pot a roast, two cats would have a grand ol' time eating semicooked roast while I was out of the kitchen.
