Was debating trying to do some jerky on my rec tec this week to bring for July 4th trip. Any suggestions?

I make my own jerky and use eye of round roast for the meat.
I'll season it with the following:
Black Pepper
Slap Ya Mama
Garlic Powder
Cumin
Chili Powder
Smoked Paprika
Soy Sauce
Worcestershire Sauce
My homemade Habanero Hot Sauce
I never measure and just go by how it looks as I'm seasoning it. I let this marinate overnight at a minimum.
Then I smoke it on my homemade box smoker at 160 degrees until it is dried to my liking. I like it to have a bit of a flex to it and not so dry it's stiff.
I'll leave out what I plan to eat over a few days and freeze the rest for later use with my vacuum sealer.

I made a bourbon and habanero marinade once and it came out amazing.
1 cup of brown sugar. A decent pour of bourbon. and some minced and mashed roasted habaneros. They came out pretty awesome.
Also cannot go wrong with: Soy sauce, teriyaki, garlic, and honey. Or just plain ole Dale's seasoning.

You may know this, but put the meat in the freezer before you slice it. You don't want it frozen solid, but frozen enough that it's much easier to consistently cut thin slices.

Shotgun - if you have grill mesh mats, it makes it a lot easier to move them around without falling through the grates.

Question ---- When you are cutting the meat, how thick do you cut it? And, how wide?
