Anyone have a good rice dressing recipe

I love it with giblet’s and chicken livers

I have used the one in the Pirate's Pantry cookbook. It's really good. Makes a lot. Careful not to add to much red pepper.

I like Emeril’s I run the liver/gizzards through the food processor instead of chopping them. Emerils.com

1 lb. ground pork
1 lb. ground beef
1/4 -1/2 (about 4 - 8 oz.) container chicken liver
1 (16 oz) container gizzards
1 bellpepper
1 onion
Make a small roux, need at least one cup.
Grind livers, gizzards, onions and bellpeppers.
When roux is made add your ground meat to the roux. Then add ground up ingredients.
Add about one cup water to the mixture. Add seasoning and cook for about one hour.
Keep adding water as needed as for it not to stick. If you want a bigger dressing
just increase the amount of ingredients and roux.
Mix in cooked rice to desired consistency

Book came in today. Looking at the recipe on page 22. It calls for 2 lbs ground pork. Is that sausage or plain pork?

Plain ground. Sausage is good but depends on what you use. A high sage or God forbid maple flavor could introduce flavors that you really don’t want in dressing.

I would say 100% ground pork, with no seasoning added.

I ended up using 1 pound ground meat, 1 pound ground pork. One pack of gizzards and half of a container of chicken livers boiled for one hour and ground up to add to the pork and beef. Used the boiled gizzard/liver stock for my liquids. Folded in steamed rice with green onions and parsley. This was a wonderful rice dressing in the coon arse Cajun style. Perfecto

1 bell pepper (chopped)
1 cup green onion (chopped)
1/2 cup parsley (chopped)
1 can French onion soup
1 can cream of chicken soup
4 cloves garlic (fine chopped)
Season ground beef to your liking
Add all ingredients raw and mix by hand
Spray and pour mixture in 9x13pan
Cover with foil, Bake at 350 for 1st 45 min
Take out. Stir. Return to oven for 45 more min
