Anyone ever heard of Kidney Bean Poisoning?

So I posted a gallery on imgur detailing how to cook red beans and rice. After it blew up, there are a few folks warning about red bean poisoning. I have never heard of such. Any of you guys ever experience this?

These folks are talking about bloody diarrhea and other severe GI distress. They have links to back it up but they all look like non scholarly links. I was just curious if anyone on this board had credible experience with it.

I’ve posioned my wife’s nasal passages in bed many times over after RB&R. Funny as shite when it’s silent and let that shite linger under some covers. Then I get hit and she storms off.

It’s total fake news. Do you know how many people worldwide would die every day? It would kill 1000x more than AIDS in the 80’s.

What I remember is that dried legumes contain a compound called lectin. Lectins found in undercooked and raw beans are toxic. Don't eat raw or undercooked dried beans.

Maybe they are thinking of castor beans. CDC says: “Ricin is a poison found naturally in castor beans. If castor beans are chewed and swallowed, the released ricin can cause injury.”

It’s only an issue if you don’t bring to a boil. I used to soak overnight and go right into the crock pot- which is dangerous apparently. Short boil takes care of it.

Also, I love Imgur expert chefs, they almost as bad a reddit. Your final product looks amazing and probably is as good as they get, yet Some were calling you a yankee bc you didn’t use bay leaf or soak beans. They kill me.

Red kidney beans definitely have a toxin in them that can cause some GI issues and have you spewing out of both ends.

However, the toxin is not heat stable and a few minutes at boiling temps will destroy it.

ETA: Found an FDA publication about it. Page 254.
