Coffee. The way it was told to me, the Chili Queens would pour the rest of their coffee into the Chili when they started making it in the morning. Cowboys would do the same thing; pour their leftover coffee in. So I tried it, and it adds depth.

I drop a few dried chipotle peppers into the mix when simmering. Remove them before serving.

I have seen the food shows on Cincinatti chili and its fame and I am stunned at the ingredients thrown into the pot, but what else can you expect from a bunch of damned Yankees.

I use dos Equis amber, chocolate and masa to tighten it. GROUND meat for me. Haven't ground my only Chili's, but that's coming. I'll try it eventually.

Anybody like Golden Hominy in their chili? I throw this in there from time to time. It doesnt add much flavor but has an awesome texture.

I read that thread again..
I did know that "cookie" didn't have a grinder or electricity, but it was certainly a shock when I found out that I didn't realize old "cookie" on the wagon train had cumin and Shiner Bock in his fridge to use in the traditional chili.

Oops - Frank McGrath played Charlie Wooster the cook for the wagon train

probably only Ole Geauxt and I would remember him.

Had to correct my poor memory to get the correct actor for Cookie

last pot i used cocoa powder and chipotle chili powder. beer, breakfast sausage. i usually combine things i like from a few recipes and just mess with it. the cocoa and chipotle was the best ive made though

Run the meat through the food mill twice, coarse grind first then the fine and go to browning.

Pinot seems like a pretty bad choice. It is way too light. Even one from Burgundy, while earthy, won't impart much flavor.


I'd either go with a Bordeaux or even a dry white wine.

They used leftover coffee on the cattle drives because water was a precious commodity. I put coffee and usually a beer in mine too.

Si senor it is cumin in the pot that makes it right not the chilis for me.
